Chicken Chili Recipe
3-4 chicken breast
2 ears of corn (one white one yellow) or use a bag of frozen yellow and white corn
1 yellow bell pepper
1 red bell pepper
1 green bell pepper
1/2 jalapeno pepper (with the seeds)
1 can of black beans
1 can of dark kidney beans
1 can of light kidney beans
Seasonings: cumin, onion powder, red pepper flakes, chili powder, garlic powder, salt, black pepper
1/2 jar salsa verde
1/2 jar hot salsa
3 cups chicken stock
Dice all of the vegetables and add beans, vegetables, stock and salsa to a crockpot or pot.
Season and cook chicken thoroughly. shred chicken and add to the crockpot.
*season chili to taste*
Crock pot: cook on low for 6-8 hours or on high for 4 hours. regular pot cook on medium low for 2-4 hours.
